I came up with this question in my health class and no one knew the answer. what would you be charged with if you took a needle with HIV infected blood and stabbed someone with it? can you be arrested and jailed for that? is it man slaughter?

Depends on the state that you live in. Mostly, it is considered pre-meditated/attempted murder.

Most likely aggravated assault with a deadly weapon, carrying (depending on the state) up to life in prison. But when, and if that individual dies from the disease, you could tried for first degree premeditated murder, carrying life (or possibly death) imprison. This is not double jeopardy, as they are considered separate offenses.

If the person dies, they will absolutely charge you with manslaughter at least. Possibly murder if the prosecutor feels adversarial.
