They will perform surgery. They should be taking all the precautions they need anyway: gloves, mask, clothing and hair covers.

Many surgeons have labs done on everyone prior to surgery including HIV. A surgeon praticing safe surgeries shouldn't have to worry about this because they should be using the safest techniques regardless of any disease a patient might or might not have. I'm not positive, but I think it's illegal to not operate on someone strictly because they are HIV positive. However, because of the weakened immune system they may want to avoid elective (not life or death) surgery because fear of infection, which causes the most deaths in immune-compromised people.
